- 1 teaspoon cocoa powder
- 3-6 teaspoons of sugar (depending on the level of sweetness desired).
- 2 teaspoons of peanut butter
- Drop of vanilla extract
- Enough water to form a thick syrup (1/4 cup or less-for sure!)
- 1 cup plus 2 tablespoons of quick oats
Put all ingredients in a small sauce pan. Heat on medium stirring constantly. Heat until it just starts to boil and everything is well blended. Add in the oats until all oats are coated with the chocolatey goodness. You may need to add a bit more oats to soak up the chocolate sauce. Drop teaspoon fulls of the mixture onto a silicone lined cookie sheet and place in the freezer for about 20 minutes or until they are set. Makes about 8 cookies.
