Chocolate Chip Macadamia Nut Cookies | Full Moon Cookies

It’s a tradition here to back cookies for the full moon. Why not? It’s fun and they are round, like full moons!

For January, I like to bake chocolate chip cookies with macadamia nuts. The macadamia nuts remind me of mini full moons, being round and white. 😆

I use regular dark chocolate chips as I cannot find vegan white chocolate chips. Let me know in the comments if you’ve crossed that barrier.

This is a small batch recipe. Makes about 2.5 dozen. Double everything for a large batch.

Chocolate Chip Macadamia Nut Cookies

  • 1/2 cup vegan butter
  • 1/2 cup plus 1 tablespoon sugar
  • 1/2 cup plus 1 tablespoon brown sugar, packed.
  • 1/2 tsp vanilla extract
  • 1 egg or egg replacer
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup chocolate chips
  • 1/2 to 1 cup of raw macadamia nuts.

Preheat oven to 375 degrees. Cream butter, sugar and vanilla in a mixer. Then add in egg or egg replacer. Next, add in dry ingredients. Mix in chocolate chips and nuts by hand. Bake 8-10 minutes depending on your oven.

You can chop your macadamia nuts or leave them whole. I always chop in half, I’m afraid of choking hazards!

FYI- I’m posting this earlier in the day so you see it in time to join the festivities. But, I will add a picture later in the day after I bake them myself.
