It’s a tradition here to bake cookies for the full moon. Why not? It’s fun and they are round, like full moons!
This month, my original idea was to make shortbread cookies. But honestly, I’m more in the mood for something with chocolate. So here we are!
This is a small batch recipe. Makes about 2.5 dozen. Double everything for a large batch.
Chocolate Chip Walnut Cookies
- 1/2 cup vegan butter
- 1/2 cup plus 1 tablespoon sugar
- 1/2 cup plus 1 tablespoon brown sugar, packed.
- 1/2 tsp vanilla extract
- 1 egg or egg replacer
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup chocolate chips
- 1/2 to 1 cup of walnuts
Preheat oven to 375 degrees. Cream butter, sugar and vanilla in a mixer. Then add in egg or egg replacer. Next, add in dry ingredients. Mix in chocolate chips and nuts by hand. Bake 8-10 minutes depending on your oven.
